Every week I'm planning on sharing what my menu-plan is for dinner. I won't always follow it but this will help give you a good idea of what an average week looks like!
Sunday: Pinto Bean Chili Nachos with Sweet Potatoes. It's the last day of rain in the forecast and I wanted something cheesy and warm: enter the nachos. Going with something along the lines of this recipe.
Monday: Broccoli Fritters with Yogurt Sauce and a Lentil Salad. Making a riff on these cheddar cauliflower cakes and pairing it with a garlic yogurt sauce and a simple lentil salad.
Tuesday: Gooey Baked Ziti. This recipe is in the new cookbook called A New Way to Food from by sweet friend Maggie Battista. Her version uses homemade almond ricotta and looks amazing.
Wednesday: Tomato Soup with Smoky Tempeh Grilled Cheese Sandwich. I have bacon tempeh that I need to use and this seems like a good way to go (until summer when I can make BLTs). I'll be using this roasted garlic tomato soup but in place of the cherry tomatoes, I'm using 2 cans of crushed tomatoes.
Thursday: Cabbage + Tofu Spring Rolls. Keeping this simple and dressing the cabbage with a bit of sesame oil and soy sauce. Add pan-fried tofu and maybe some roasted sweet potatoes. Using this recipe for the tofu.
Friday: Burgers + Homemade Potato Chips. Ending the week strong with my favorite burger recipe and testing a recipe for homemade potato chips (dusted with a bit of berbere seasoning!)
