I love making pasta and this is great whether or not you have a pasta maker.  If you don’t- just roll out the dough and use a knife.

1.  Combine 1 1/2 cup whole wheat flour, 2 tablespoons of black pepper (I made black pepper fettuccine), and 1 teaspoon of salt.

2.  Make a well, add two eggs, and 3 tablespoons of water.

3.  Using a fork, whisk eggs and slowly begin to incorporate flour.

4.  Continue to incorporate flour and a paste will soon form.

5.  Continue to mix (eventually ditching the fork for your hands) and knead dough into a smooth ball.

 

6.  At this point you can roll out by hand or use your trusty pasta attachment (I LOVE THIS!)

7.  Divide the dough into four balls.

8.  If running through the attachment- start with the flat roller.  Put through on setting 1 twice, 2 once, and 3 once.  I usually don’t roll my dough any thinner.  Then, run through the fettuccine roller.

9.  Set aside to dry or prepare a pot of water to cook the pasta (which would take 4-5 minutes in a pot of boiling water.)

    Thank you for such a great recipe. Sometimes it’s too easy to go with white pasta. I definitely want to try this.
