I had all intentions of doing a very vegetarian Thanksgiving recipes round-up this year. As it turns out, my archives are filled with many, many wonderful ideas. It’s an amazing thing that happens when you’ve been blogging for seven years. Instead, time got away from me and here it is the week of and all the days I was going to post came and went. To this I say, “oh well.” I’ve hit second trimester and was really hoping for an uptick in my energy but instead I got a cold (feeling better now, however!)
I wanted to make sure that I shared the Vegetarian/Kid-Friendly spread I created for Kiwi Magazine this year that features Pumpkin White Bean Hummus, Maple-Roasted Root Vegetables, Butternut Squash and Spinach Lasagna, Cornbread and Brussels Sprouts Stuffing, and Vanilla Cupcakes with Cranberry Filling and Whipped Cream. (all recipes are on Kiwi Magazine’s site)
And of course, I’d be sad if I didn’t share a few of my favorites vegetarian Thanksgiving recipes my own site. My favorite recipes include sweet potatoes, butternut squash, and all the good fall vegetables. These are just a couple from each category but if you want more, be sure to pop over to my recipe page and search through the past recipes. There are a ton of good vegetarian Thanksgiving recipes in the archives that are great for even the meat eaters in your family!
