I had all intentions of doing a very vegetarian Thanksgiving recipes round-up this year. As it turns out, my archives are filled with many, many wonderful ideas. It's an amazing thing that happens when you've been blogging for seven years. Instead, time got away from me and here it is the week of and all the days I was going to post came and went. To this I say, "oh well." I've hit second trimester and was really hoping for an uptick in my energy but instead I got a cold (feeling better now, however!)
I wanted to make sure that I shared the Vegetarian/Kid-Friendly spread I created for Kiwi Magazine this year that features Pumpkin White Bean Hummus, Maple-Roasted Root Vegetables, Butternut Squash and Spinach Lasagna, Cornbread and Brussels Sprouts Stuffing, and Vanilla Cupcakes with Cranberry Filling and Whipped Cream. (all recipes are on Kiwi Magazine's site)
And of course, I'd be sad if I didn't share a few of my favorites vegetarian Thanksgiving recipes my own site. My favorite recipes include sweet potatoes, butternut squash, and all the good fall vegetables. Wow, all of these recipes look stunning, but those salads in particular are calling my name (and I'm sure will be a welcome burst of freshness and lightness tomorrow after tonight's meal!)

Oh wow ALL of this looks amazing!! I didn't celebrate Thanksgiving but so many of these can be used for Christmas as well, so I'll definitely be keeping it for then!
