I feel like I need to apologize for all the halloumi recipes but guys, salty cheese. SALTY CHEESE (I’m probably a bit overenthusiastic about this but it’s become my new favorite.) The recipe for the #SoLetsPigOut potluck (hosted by Gina + Emily) was actually going to be a cherry/halloumi/farro salad but at the last minute I picked up some perfect stone fruit at the farmers market and the peaches were so amazing, the salad turned into these skewers.

As for this basil-jalapeño sauce, I have my lovely reader Trish (hi, Trish!) to thank for the inspiration. When I requested you guys to send me ingredients for my kitchen-ingredient challenge, I got so many awesome suggestions and while I’ll be debuting the ‘official’ recipe next Tuesday, I could’t get the idea of using jalapeños and basil together out of my head (it also doesn’t hurt that basil + peppers happen to be two of the three things my garden is producing.) Between the sweet peaches, salty cheese, and basil-spiciness, I could (or should say did) devour an entire plate of these.

Grilled Peach and Halloumi Skewers with Basil-Jalapeno Sauce

Ingredients
  • Skewers
  • 2 just-ripe peaches
  • ½ medium red onion
  • 7-8 ounces halloumi
  • 1 tablespoon olive oil
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

  • Sauce
  • 1 cup packed basil
  • 2 jalapeño, seeds removed
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 2 teaspoons honey
  • ¼ teaspoon sea salt
Instructions
  1. Soak skewers in water for at least an hour before using.
  2. Light grill to medium-low heat. Cut peaches, red onion, and halloumi into roughly the same-sized chunks.Thread, alternating peaches, halloumi, and onion, onto the soaked skewers (roughly 3-4 of each). Continue with remaining skewers. Brush mix with olive oil and sprinkle with salt and pepper.
  3. Grill skewers, turning occasionally, until halloumi is beginning to char, 2-3 minutes per side. Remove from heat.
  4. To make sauce, combine ingredients in a blender or food processor and run until pureed. Serve skewers with basil puree.
