April Week in Meals | @naturallyella

I'm not one to usually exclaim how fast time feels to be whipping by me but in the past few months, I'm left hanging on, trying to slowing down, and living more in the now. The start of April marks the final homestretch of this pregnancy (only somewhere between 4 and 8 weeks left, his guesstimate date is May 17th) and after the initial shock of pregnancy at the beginning, things have been going fairly smoothly and my taste really haven't changed (minus the fact that all those spicy foods I love are currently on a 'do not eat list'.)

When I lived in the Midwest, April was my favorite month. It brought warmer weather, rain, and the first sighting of fresh spring produce. On the first day that felt like spring, the windows would fly open and I would always remember to take a deep breathe and soak it all in- one of the best feelings in the world.

The produce: Strawberries, Rhubarb, Greens (spinach and chard), Carrots, Red Potatoes

The Pantry items: Lentils, Brown Rice, Millet, Chickpeas

The star of the week: Strawberries (I'm currently obsessed and hoping to head to the local organic u-pick this weekend to grab my fill.

  1. Yum! What a beautiful week of meals. Your photos make me want to try them all right now. Specifically those pancakes! I would love a gluten free version of that. MMM.

  2. Good gosh this food looks delicious! I just ate the biggest vegetarian black soybean taco, so my stomach is currently making me feel horrible, but everything in this post makes me want to eat! The nut, brown rice and oat veggie burger sounds delicious (I'm a real sucker for veggie burgers; the one I usually make has black beans, sweet potatoes and quinoa in it)! Thank you for all the ideas! I convinced my mom to go veggie for a week, and this is exactly what I need to motivate her!

  5. Hi Ella,

    When my sister was pregnant she couldn't prepare her own meal cos she literally lost her sense of taste, even when she did, she wouldn't be able to eat the meal, shes always complaining of the food not tasting right, so thumb up for being able to do all that.

    Great meal plan, and as a matter of fact, I was drooling over the pictures when scrowling down. Thanks for sharing this.
