When I was in college, my friends and I would frequent a place called Foodstuffs. The name sounds extremely generic but I had a dream that if I were ever to open a storefront, I wanted it to be just like this one. There was a salad station where you could tell them exactly what you wanted in a salad (and have every ingredient to choose from), sandwiches, baked goods (the scones, oh man, the scones), and a deli case full of prepared meals and salads. It was my saving grace when I was trying to eat healthier in college (but not so nice on the wallet).
Since then, I've always been brainstorming about my pretend storefront and the items I would sell (yes, I still play pretend because you never know when I might actually make the move to do this). In this place, the deli case would be full of items just like this farro salad- the perfect grab and go side (or meal) for any occasion. The herby dressing is really what makes it but I also love the nuttiness that the farro brings to overall dish. And while I'd love to always use fresh peas, there are definitely occasions where I'd use frozen (like, "oh we have a party to go to in an hour and I'm supposed to bring something!")
While I love whole farro, pearled farro might be easier to use for this salad as it takes less cooking time. However, either will work!
Mmmmm, have you tried farro in split pea soup? It's so good!

You're right, this would be a great deli case item for your store, one I would certainly purchase! Love the tangy and herb heavy yogurt sauce. Frozen peas are one of the few staples I keep in the freezer and I've found it so helpful when I'm preparing something last minute or my fresh produce stock is dwindling.

I made this tonight and we absolutely loved it ! I skipped the feta because I didn't feel like it, and added fava beans instead, but that's the only change I made. It really is a great salad, the dressing has just enough flavor to let the peas shine through — all in all, I'll definitely be making it again ! Thank you for this recipe.
Healthy snacks and meals are very important to me, but being easy to make is even better. This dish looks wonderful. Would be great for a family gathering or potluck. Thank you for posting!

I made this yesterday for the 4th of July and it was amazing! I ended up having some non-dairy guests, so I used a coconut-based Greek yogurt (and left the feta to the side) and it was fantastic.
I'm super fan of FoodStuffs! It is a bit expensive, but always and in every circumstance they have a fresh selection of fantastic salads and deli jelly beans. I would love to see this in your convenience store - or in a common supermarket!
