Before we dive into burgers, I wanted to give a few updates on the cookbook! My friends have been sharing recipes from the cookbook this week and I think they are hitting it out of the park with these recipes adaptions and photos. So gorgeous! Be sure to check out the recipes:

Okay, enough book talk, on to burger business.

When I worked as a waitress my last year of school, I had my one favorite meal: a veg burger with grilled onions on rye bread. It wasn't anything too complicated but I think it was the combination the rye bread with the grilled onions. I don't always keep rye bread in the house so my typical version is usually just this brown rice burger topped with a bit of grilled onions, however, if I find a fresh loaf of rye bread, I pick it up and make these patty melts.

I explained in the post about these burgers that they aren't your no-fuss veg burger and are a bit soft/crumble easier than some other recipes. Yet, the flavor of the oats, brown rice, and nuts is such a winning combination (like in this buffalo 'crumble' salad!) And of course, you can't go wrong grilled onions.

Instructions

  1. Make burgers as normal. Light grill (with grill pan) or a grill pan on the stove top. Slice onion into 1/8" slices and brush with 1/2 tablespoon olive oil. Grill onions along side burgers until onions are lightly charring. Stack a few rings of onions on the burger and top with sliced cheese. Transfer burger to a low-heat spot on the grill and let sit as cheese melts.
  2. Brush rye bread with remaining 1/2 tablespoon and place on grill. Let bread toast for 1-2 minutes on each side. Assemble burger and devour.

Notes

*alternatively, instead of grilling the onions, use caramelized onions.

  1. grilled rye bread and onions is a match made in heaven! I love it so much! I will have to try these veggie burgers and get away from my regular tempeh slices!!

  2. Absolutely amazing! Looks soooo good! How can you go wrong with swiss cheese and onions on a burger? I love to add a bit of good quality balsamic vinegar to the onions at the end, makes them event better... 🙂
