'Groovy' Bagel Melt with hummus, havarti, and vegetables

Ingredients

  • 1 sprouted grain bagel
  • 2-3 tablespoons favorite hummus
  • 1/4 cup shredded carrots
  • 1/4 red bell pepper, thinly sliced
  • 1 tablespoon sun-dried tomatoes (packed in oil)
  • 1 ounce sliced havarti or provolone cheese
  • 1/4 to 1/2 cup of sprouts or spinach

Instructions

  1. Preheat broiler. Slice bagel in half and place under broiler just until lightly toasted (watch it carefully- this won't take long.)
  2. Taking the bottom bagel part, spread the hummus evenly and layer on the carrots, peppers, and sun dried tomatoes. Cover with cheese and return to broiler. Bake util cheese is melted and slightly bubbling (again, keep a close eye!)
  3. Remove, add sprouts, and top with bun.
