As we dive into the cooler months, I thought it was time to share one of my favorite recipes from The Easy Vegetarian Kitchen: grilled turnips (yes, I said turnips). It's simple but that's a big reason why I like it along with the idea of using turnips in something other than a mash. I'm guilty of passing up root vegetables for squash and sweet potatoes but over the years, I've found ways to get into the groove of using the different root vegetables in my cooking.

Variations for Turnips
As mentioned above, this turnip recipe is light on ingredients but in my mind, that makes it the perfect recipe to build upon. Of course, if you're looking for a light appetizer, stop at just the recipe but I'll often grill up the turnips for other uses, like the ones mentioned here:
Salad: Similar to this salad where I grilled fennel, grilled turnips would make a lovely addition to the spinach-based salad.
Grain Bowl: A solid fall recipe, this turnip bowl is a hearty meal. Use these grilled turnips in place of their roasted counterpart and toss with the sesame mixture after grilling (instead of the dill olive oil).
Omelet: Probably not your first idea of good omelet filling, but the turnip/dill mixture works nicely with eggs (I usually don't add any cheese).
Grilled Turnips with Dill Olive Oil
- Prep Time: 10 mins
- Cook Time: 10 mins
- Total Time: 20 mins
- Yield: 2 servings 1x
Ingredients
- Turnips
- 1 large turnip, cubed
- 1 tablespoon (15 ml) olive oil
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- Dill Oil
- 2 teaspoons minced fresh dill
- 1 tablespoon (15 ml) olive oil
- 1 tablespoon (15 ml) lemon juice
- ¼ teaspoon salt
Instructions
- If using wood skewers, soak in water for at least an hour before using.
- To make the turnips: Bring a pot of water to a boil over high heat, add the turnips, and cook for 2 minutes. Drain, add to a bowl, and toss with the olive oil, salt, and pepper.
- Preheat the grill to medium-low. Thread the turnips onto skewers and grill until lightly charred, 2 to 3 minutes on each side.
- To make the dill oil: Combine all the ingredients in a bowl and whisk together. Drizzle the dill oil over the grilled turnips and serve while still hot.

Maybe a mix of parsley and/or chives? You could also skip the herbs and do garlic!
