I have come to the conclusion that sometimes my brain moves too fast for my mouth and I ended up speaking in shorthand.  How do you speak shorthand you ask?  Very simple, just take a syllable or two out of the phrase you are saying and combine it into one word.  Just a fair warning though, sometimes the words are less than appropriate.

For example, the other night the words, “you bitch” came out of my mouth towards Mike.  Now, I really didn’t mean to call him that.  In fact, it was after a kiss that I leaned back and said that.  He looked so surprised at what I just called him until I was able to explain what I actually meant to say was, “you’re beard itches.”

Another example came after I saw the Taco Bell commercial about the fast food diet.  I was attempting to explain this to someone when out of my mouth came, “tacspoken.”  Needless to say, I meant taco bell spokeswoman.  (I am still not sure about losing weight through Taco Bell but that is where the recipe for today comes in.)

After seeing the taco bell commercial, I got the mentality I normally did “anything you can do I can do better.”  So, I set off to the kitchen because I was going to make tacos.  Veggie tacos that is.  See, already better than Taco Bell!

Vegetable Tacos

  • 1 tablespoon olive oil
  • ½ small zucchini
  • ½ medium onion
  • 1 clove garlic
  • ½ medium red pepper
  • 1 tablespoon jalapeno
  • ½ cup corn
  • 1 teaspoon cumin
  • salt and pepper to taste
  • 4 slice queso fresco
  • ¼ cup monetary jack cheese
  • 4 corn tortillas
  • tomatoes, fresh cilantro, and avocado to top
  1. Heat oil in a skillet over medium heat, add onions and garlic until onions start to soften. Add in corn, zucchini, peppers, and seasonings. Continue to cook until zucchini and peppers are soft. (I let mixture cook for about 15 minutes.)
  2. When mixture is close to being done, heat another skillet to soften corn tortillas. Taking one tortilla at a time, heat until soft, add queso fresco , and fold over. Continue to heat through until cheese. Remove from skillet, open tortilla and scoop a fourth of the mixture vegetable mixture. Top with cheese, tomatoes, cilantro,and avocado. Repeat with remaining tortillas. Serve immediately.
