These look amazing! I am always on the look out for my ideas to cook beets. We’ve been getting a ton of them in our farm share, but we’re not the biggest beet fans around here. I’ll try these!

When I started making this soup, I was planning on using heavy cream until I realized I still had coconut milk in the refrigerator. I’m glad I did too- I don’t think this would have been as good without the coconut milk!

I hate to say this but I really do not know- nothing ever last that long in my house! I would think that if you make sure you bake every chip so that there is no moisture left, you might be alright…
