I learned a valuable lesson today: never trust your dog.  You may think he is cute and cuddly and even though he hasn’t shown any interest in people food doesn’t mean that one day he won’t turn.  Once he gets that first bite, it’s over.

On Sunday, my dog ate 1/2 a quiche and stashed a loaf of bread through out the house.  Today, well, take a look for yourself:

See, I made this beautiful loaf of cinnamon bread but I left it out to cool before I took photos.  I ran a 20 minute errand and this is what I came home to find.

Dog 50, Erin 0.  I’m telling you- this loaf was soooo pretty.

The only thing that makes this situation okay?  The bread tasted delicious and filled my house with a cinnamon smell (yes, I made this bread for the simple pleasure of having my house smell like cinnamon)

Cinnamon Quick Bread

  • 1 cup wheat flour
  • 1½ cup unbleached all purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup natural sugar
  • ½ cup butter
  • 2 none eggs
  • 2 teaspoon vanilla extract
  • ¾ cup greek yogurt
  • ¾ cup milk
  • divider filling
  • ¼ cup sucanat
  • 2 tablespoon cinnamon
  1. Pre-heat oven to 350˚.
  2. In a large bowl, combine the first six ingredients (the dry ones) and stir to combine. Add in remaining wet ingredients and stir until mixture is well combine. Quick breaks are not very finicky; however, if you want, combine wet ingredients in a separate bowl before pouring into dry.
  3. In a buttered 9x5 pan, spread ⅓ of the mixture of the bottom; sprinkle half the sucanat and cinnamon. Repeat with ⅓ more of the batter and the last of the sucanat/cinnamon. Finish with batter. You can opt to put a crumb on top (butter cut into flour and sugar) but I chose to leave it off.
  4. Bake for 50-60 minutes until a knife comes out clean when inserted into the bread.
