Since I started this food blog, I’ve had the opportunity to meet and become friends with many awesome people that I wouldn’t have met otherwise. It’s kind of crazy, really. About a year an a half ago, I drove up to Chicago for a Joy the Baker book signing and asked Melissa (The Fauxmartha) if she would want to go with me even though we had yet to meet in person. I remember arriving at her apartment building feeling about as nervous as I would on a first date. Would she like me? What would we talk about? Will she think I’m ridiculous?
It turned out I had nothing to be nervous about and from that day, I’ve been lucky to call her a friend and business partner. It only seems like a month ago that we were chowing down on arepas as we sketched out ideas on a napkin for our possible business venture. Melissa is one heck of a talented lady. She creates all the design for Wooden Spoons Kitchen, knits beautiful cowls, is a DIY machine, and of course bakes up some awesome things for her site.
If you follow Melissa’s blog, you probably know that in about three weeks, she’ll get to meet her first child, a baby girl. I couldn’t be more excited for her as I think she’ll make one heck of a mom. Since we live 2,897 miles apart, I gathered a group of fellow blogging friends to have a virtual baby shower to celebrate.
Because Melissa loves breakfast and we all love her waffles, we decided to do a waffle baby shower (because really, who wouldn’t love a party full of waffles?) You may remember me raving about her waffles when we took over Heidi’s kitchen and she was nice enough to make waffles for a lazy Saturday morning. I did a pretty close adaption to her waffle recipe but mixed it up by using spelt and whole wheat pasty flour. I only hope one day all of us can have a real party, filled with waffles (preferably in Denver .

- For the Waffles
- ½ cup spelt flour
- ½ cup whole wheat pastry flour
- 2 teaspoons baking powder
- ¼ teaspoon sea salt
- 1 tablespoon maple syrup
- 2 large eggs
- 3 tablespoons melted butter
- 1 cup 2% or whole milk
- 1 tablespoon orange juice
- ¼ teaspoon vanilla extract
- For the Peaches
- 3 ripe yellow peaches
- 3 tablespoons brown sugar or maple syrup*
- 1 teaspoon cinnamon
- Preheat waffle iron and turn your oven on to 200˚.
- In a large bowl, stir together dry ingredients for the waffles. In a separate bowl, whisk together the wet ingredients. Pour into the dry ingredients and stir until combined.
- Pour ¼ of the batter into the iron and cook according to the instructions of your waffle iron. Remove and place done waffles on a baking tray. Continue to with remaining batter. Place done waffles in the pre-heated oven until ready to serve.
- To make peach sauce, cut peaches into ¼” slices. Combine sliced peaches, brown sugar, and cinnamon in a large skillet or sauce pan. Heat over medium-low heat until sugar has dissolved and peaches are soft/beginning to break into pieces.
- To serve, smother waffles in peach sauce, butter, and a drizzle of maple syrup if desired.
