There are very fews things that make me as happy as when I’m in the kitchen, whipping up a meal to feed a crowd. I make lists with detailed schedules, prepping to my hearts content. The radio cranked up in the background, dancing around the kitchen: it’s pure bliss.

M and I decided it was finally time to have a small housewarming party with a few of his coworkers. I opted to do a build-your-own taco bar and as always, I made far too much food but you can never go wrong with leftovers.

Below is the list of everything I whipped up. Almost everything can be made in advance, leaving time to mingle and have a low-stress party!

For the tacos:

Spiced Black Beans 

Corn and Pepper Relish (I added a touch of Smoked Paprika this time)

Grilled Vegetables: Zucchini, Onion, and Baby Sweet Peppers

Cheeses: Queso Freso and Goat Cheese

Tortillas: Corn and Flour (I opted to buy this time but you can always make your own flour or corn tortillas)

Mexican Rice

(for the meat eaters: )

Spiced Shredded Chicken (same seasoning as this recipe then grilled the chicken)

Mexican Shredded Pot Roast 

Salsas/Guacamole
