There are times I forget, I’m still young. I forget what it feels like to drive with no destination, to have a day without worry, or to simply enjoy the small wonders of life. I feel like I spend so much time fretting about what is going to come next that I forget to live in the now. I end up with a restless feeling; a feeling that leads me to seek out more, to want to explore, run and be free.

This cake is a celebration cake.

I’ve lived in the state of Illinois my entire life. I’ve lived all over the state but never once ventured out it’s borders. I’ve always dreamed of living among mountains or watching a tide come in as part of a daily routine. I’ve never had the opportunity (or more so, never convinced myself I could).

A lot has changed in the past few months. I’ve gotten engaged, started working towards my own business, and come to terms that the current path I’m on is not one I love. I feel like even though I’ve grown a lot, I’m beginning to remember more and more that I’m still young. Now is the time to explore and venture forth.

So here it is: I happened to stumble across a job that I thought would be perfect for M. I told him, he applied and was offered (and accepted) the position. All of this in one week’s time. It’s crazy but that tends to be how we live.

Next month M’s packing up the jeep and driving 2,000 miles to start fresh and in May, I’ll be joining him. We’re headed out of our comfort zones and moving to Sacramento, California.

I couldn’t be more excited.

M is going to be working for an awesome company and as for me, I still have some exciting news up my sleeve (and no, it’s not a baby or a cookbook)!

So, if you live in the area or are a California enthusiast, I’d love to hear your suggestions of places I need to visit. I’m already making a list for all the places in San Francisco as well as heading to Yosemite, Lake Tahoe, and hopefully up north to Oregon and Washington.

Oh, and this cake?  It’s awesome. It’s a riff off my maple pumpkin bread, so it’s not quite traditional cake but I promise you will love it just as much.

Pumpkin Cake with Cream Cheese Frosting

Serves: 10

Ingredients
  • 2½ cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoons ginger
  • 1¼ cup maple syrup
  • 3 eggs
  • ½ cup walnut oil or melted butter
  • 1¾ cup pumpkin puree
  • ½ cup crushed pecans, optional
  • 1 recipe for cream cheese frosting
  • cinnamon and toasted pecans to top, if desired

Instructions
  1. Preheat oven to 350˚ and prepare two 9″ cake pans by lightly greasing with oil and dusting with flour.
  2. Combine whole wheat pastry flour, baking soda, cinnamon, nutmeg, and ginger in a large bowl.
  3. In a separate bowl, whisk together eggs, pumpkin, oil, and maple syrup. Pour in to dry ingredients and stir until well combine. Fold in pecans if desired. Pour batter evenly in to the two pans, smoothing out to each edge.
  4. Bake for 25-30 minutes, or until cake springs back when pressed. Remove from oven and let cool in pan for 10 minutes. Remove cake from pan and continue to cool.
  5. When cake is cool, make frosting and frost cake. Sprinkle with cinnamon and pecans.

    I live half an hour from Sacramento – and I love, love, LOVE this area. Sacramento is 2 hours from South Lake Tahoe, 1.5 hours from San Francisco, and 1.5 hours from Napa.
    Here are some of my recommendations:
    *Old Sacramento – relive sacramento in the 19th century
    *Stinson Beach- cutest little town right next to the beach. This is my go-to beach.

    *Muir Woods – You cannot get tired of muir woods. I have gone numerous times and it never gets old…and I have yet to see it all.
    *Alameda County- cutest array of little towns filled with antiques, shops, and delicious restaurants. A weekend trip here is a must! (2 hours from Sac)
    *Lake Tahoe – because its gorgeous anytime of the year!
    *San Francisco -Pier 39, Ghiradelli factory,Boudin bakery,
    *Napa/Yountville/Calistoga -how can you not love the wine country?
    *Yosemite – nuff said!

    I moved to the Sacramento area from Ohio 4 years ago and have been blissfully happy ever since! Just think, you don’t have to shovel sunshine!
    We’re huge fans of wine country and would suggest going to Sonoma instead of Napa. Napa is great but Sonoma is more relaxed, more friendly and a little less crowded. Plus it can be 30-40% less expensive for wines that are equal or better in quality. San Fran is a great weekend trip and you must go to Chinatown and do a tea tasting at one of the shops! Otherwise, I agree with Katie R’s recommendations!

Welcome to California- I live about 30mins from Sac. You will definitely want to visit Tahoe during the winter to go skiing. Also Napa is so much fun for a weekend or day trip- amazing restaurants- I love Solbar or Bottega for a nice dinner.

    Hi Erin! How exciting about your move to California! As everyone else has said, you will love it! I’m from Mt. Shasta, a 3.5 drive north of Sacramento. It’s the most beautiful area ever! You can hike to waterfalls, go swimming in lakes in the summer and ski or snowshoe in the winter. The small town is right at the base of the mountain. I would definitely recommend a trip up there when you get a chance. It’s breathtakingly beautiful!

    Just visiting your blog for the first time today, but saw your post. I lived in Trinity County for a year. At the time, it was the only county in California without a stop light. It’s gorgeous, a wonderful mix of people from all walks of life who find themselves living in the midst of the mountains in a time of change. Lots of places to hike and bike, and some great food too. Weaverville is the county seat and the place with the most to do, but Hayfork will surprise you if you give it a chance.

    I just made this and it is awesome. I added about 1/4 cup of apple sauce to the batter because it seemed a wee bit thick. The cake itself was a perfect density and it was just pumpkiny goodness. Planning to make this again next week!
