I think I have an obsession, but it’s okay.  Yesterday’s video post hopefully inspired you to embrace the awesomeness of the spring roll and today’s post is meant to give you mega flavor inspiration!

I love spring rolls because they are easily gluten-free and vegan along with the fact you can really wrap any ingredient up!  I think most of the fun comes with trying new and exciting flavors and I think there are some great combinations (and of course, the dips are always nice too!)

Roasted Radish and Kale Spring Rolls with Tahini-Honey Dipping Sauce

Swiss Chard and Spicy Peanut Sauce Spring Rolls

Soy-Glazed Roasted Carrot Spring Rolls

Sweet Chili Roasted Sweet Potato Spring Rolls

Sesame-Ginger and Quinoa Spring Rolls

Peanut Dipping Sauce for Spring Rolls

 So go forth, find some wrappers, and make some rolls! (and I promise to stop bombarding you with them- for a bit….)

    I couldn’t find the rice papers…any suggestions where I need to look?

      Usually health food stores have them or if you live close to an Asian market. Last resort you an order them online (but they can be a bit fragile to ship!

      Christine- I can usually find them in my local health food store or Asian market. If you can’t get to either of those, you can order them online (although I’m not sure how they fare shipping!)

    Wait–there are people who *aren’t* obsessed with spring rolls? These different combinations sound amazing–I want to try them all! And Christine, you can usually find rice paper wraps at Asian markets. :)

    Oh man! Since I’m Vietnamese, I eat spring rolls all the time. They used to just make me think of home but now all I think about is you and your blog! You’re so clever with the different flavour combos =P I’m surprised you haven’t made any with beets yet, you love beets so much haha
