I’m craving something a bit different today.

I’m craving simplicity.  I feel on life and technology overload.  It’s such a strange time to be a blogger (either big or small.)  There are people declaring food blogging has “jumped the shark” or that trying to start now is like entering in to a small pond with an overload of big fish.  There’s the campaign to be real (with some great post) and the true interest in how certain bloggers go about their day to day.  There are books on how to start food blogging and more manuals then I can count about how to take great food photos.  There’s conferences, twitter meet-ups, sponsorship, and really more things than I can track.

What does all of this make me want to do?

Turn off my computer.

Go camping.

Eat salads.

My body is telling me to push in the opposite direction, to go simple.  So this week I’m craving a simple salad, a little camping, and time away from the computer. I feel like I need to hit a refresh button and I’m thinking a little fresh air (and some salads) are going to do the trick.

Maple Roasted Beet and Goat Cheese Salad

Serves: 2

Ingredients
  • handful of beets
  • 1 tablespoon walnut oil
  • 1 tablespoon maple syrup
  • pinch of salt
  • lettuce
  • goat cheese
  • sunflower seeds
  • Olive oil, for drizzling

Instructions
  1. Preheat oven to 425˚.
  2. Whisk together oil, maple syrup, and salt. Wash and quarter beets (I don’t peel beets.) Toss is oil mixture and place on a baking tray. Roast until soft and tender (this could take anywhere from 45 minutes to and hour and a half- just depending on the size of your beets.)
  3. Once done, toss together with desired amount of lettuce, goat cheese, and sunflower seeds. Drizzle with a touch of olive oil.

    I can completely understand that. Sometimes it’s all so overwhelming, I don’t know where to start and so my brain just shuts down. I don’t necessarily think it’s a bad thing. Especially if it means roasted beets ;)

    Um, can we go camping and eat salads together? That’s what I’ve been feeling like lately too with everything I’ve been reading about blogging and food media. It’s a lot to think about and stew over. Too much.Throwing up our collective hands and retreating to the great outdoors with some salad in tow? Best solution. Like ever. Serenity now!

    I totally agree. But the people who are entering the blog world to try and be the “big fish”- the most popular and the best paid- aren’t really in it for the real reasons, are they?

    When I started blogging a year and a half ago, I had no idea what I was getting myself into. Sure, I had seen a few blogs, but never imagined how hard it was to actually take good pictures, write a decent post and then, if lucky, have someone come visit my blog. All in all, it was all worth it.

    I am so jealous that your summer vacation has officially started. I’m a school teacher and mine won’t start until about 4 weeks from now. My students have already checked out though… senioritis everywhere. I just started blogging a couple of months ago and am happy enough if I get 2 comments on a post… I obsess and feel sad that no one is saying hi, but oh well… I do it because I want to share what I make in my kitchen and want to encourage everyone to experiment and play with food. Most of my real-life friends are not really into food and I found that blogging about cooking gives me the outlet that I need. :) Love this salad and all your wholesome recipes!

    That recipe looks amazing! (actually, I LOVE anything that includes maple syrup so I will certainly try this one out!). Thanks for sharing! By the way, quick tip: I get my organic maple syrup online with ROUGE maple. I’ve never tasted a better maple syrup and it’s hard not to pour it on everything I eat!! Bon appetit!
