I’m not feeling much for words today ( I think my brain has decided to really relax on Spring Break.)  So instead I leave you with an awesome “recipe” that can be adapted to any flavor you like.  I love Lärabars but if you love them as much as I do, they get really expensive.  I figured it had to be easy to make but I never thought twice about it until Jen (from Use Real Butter) posted the amounts and instructions.

With summer fast approaching, I’m getting really excited to be outdoors!  I love these for hikes because there’s no fake ingredients and no false sugar!  I made up a pan and cut it into 14 bars (of which I froze 10 for future use- with all this warm weather in Illinois, I feel some hikes coming on!)

Homemade Chocolate Hazelnut Lärabar

Ingredients
  • 2½ cups medjool dates, pitted
  • ¾ cup almonds, toasted
  • ¾ cups hazelnuts, toasted
  • 3 tablespoons cocoa powder
  • ¼ cup dark chocolate, finely chopped (optional)

    Let me just tell you how you just made my day! I love Larrabars and the fact that there’s only 2-4 ingredients in it. Because of this fact, I keep telling myself that these bars shouldn’t be too hard to make, but I just never tried it. This is my moment of inspiration. Thanks for showing us how doable this is. Your pictures are commanding me to do this!

      I’d hate to imagine how much I spend on them! I mean, dates and hazelnuts are a bit expensive but it’s so worth it!

    I just made these! Thanks for the post! I looked at the usemorebutter.com website too. I made 2 batches. One batch had dried apples and cinnamon, toasted almonds and dates. The second batch was dates, peanuts, salt and chopped dark chocolate. They are soooo good! I am so excited. My kids love breakfast bars but I don’t buy them often because they are sooo unhealthy. But I saw this post this morning, went right over to the health store and bought the best dates I could find and made 2 batches. I am so excited about these. Thank you SOOOO much for the post Erin. I only discoverd your blog about 2 weeks ago, but I have been on here repeatedly and just love it! YAY!

    I attempted this recipe and actually burnt out the motor on my food processor trying to process the dates. I then chopped them by hand, after rinsing them in a little water to make them easier to manage. However, they then didn’t stick together in the pan. Do you have any suggestions?
