Really, this post isn’t a recipe.  It’s more of an inspiration, an idea.

See, I love grilled cheese sandwiches and I love adding things to grilled cheese sandwiches.  This by far is one of my favorite ways to eat a grilled cheese sandwich (if not my favorite way…)

I eat them so often that I’ve never really thought to post about something so simple.  However, with my recent love of sweet potato curry hummus, I couldn’t resist.  The spicy, earthy flavor of the hummus melts right in with the cheese.

You can use any type of cheese you want (this sandwich had baby swiss) and you can add veggies (i’ve been known to add roasted onions, carrots, sweet potatoes, etc.)  The possibilities are endless with the hummus/cheese combo.  The idea is simple:

Step one: Smear a large dollop of hummus on one side of the bread and place one to two slices of cheese (along with any other miscellaneous veggies.)  Place other piece of bread on top and lightly butter (or olive oil) outsides of bread.

Step two:  Carefully grill each side of grilled cheese over medium low heat (lower heat means more melty cheese on the inside with less burned bread on the outside.)  I love my panini pan for this!

Step three: Don’t get impatient and turn up the heat.

Step four: Seriously, don’t get impatient.

Step five: Cut in half (either diagonally or horizontally) and enjoy while cheese is still gooey!

Pair the sandwich with a small side salad and you have an excellent lunch!

So this post may have been a “well duh” but I hope to inspire someone to try some hummus on their grilled cheese sandwich!

    I was pretty sure I’d done everything you could possibly do with hummus (I’ve made a sauce for eggs, salad dressing, even cookie dough hummus “frosting”) but apparently I was missing something! Sounds fabulous :)

    I’m trying to figure out of my store-bought hummus would work with my plain jane cheeses I have in the fridge (cheddar, pepperjack)… but I love the idea! Might have to get adventurous next time I’m shopping.
