I needed today.

Starting a new job is always stressful and starting a new job that isn’t the most organized can sometimes lead to more stress and frustration.  I love my job, I just needed a day off.

I walked to the farmers’ market, went out to the farm, baked, and relaxed.

I also opted to do something I’ve never done before: egg poaching.  I got back from the farm and went a little over board on picking tomatoes (I can’t get enough!) and I wanted a way to eat them for breakfast without having to make an omelet.  So I slathered a piece of toast with a little mustard, sliced up tomatoes, and poached an egg.

This breakfast was delicious and super simple.  I even poached an egg well (besides the fact that I over cooked it so I didn’t get the cool oozing effect when I cut into the egg.)  I recommend hoping over to Smitten Kitchen- she has great instructions!

    Poaching is my absolutely favorite way of cooking an egg!! There’s just something divine about a perfectly poached egg. It’s so much lighter and smoother than a fried egg (not the same at all despite the recent ranting comments on CNN). I’d make them every day if I could but alas it’s takes way too long to poach eggs for a family of 6 rather than throwing together one big omelet.
