I’m feeling good.  I start my new job today, I’ve been cooking a bunch of delicious food, and I’ve decided to do an impulsive giveaway!

Have you bought Super Natural Every Day by Heidi Swanson yet?  If not, you are totally missing out but here is your chance to remedy that!

This book is ahhh-mazing.  I have such a food-crush on Heidi and her amazing recipes that it’s kind of ridiculous.  Rarely do I find a cookbook that every recipe is one I would love to make.   Yet, this cookbook has me going back to the kitchen with every turn of the page.

So, I am doing what any good person would do: I’m giving away a copy of the cookbook.  Personally, I think anyone who enjoys fresh vegetarian cooking needs this book (and frankly even those who don’t need to get this book too!)

This recipe is straight out of the cookbook and is such a great way to use up all that great summer cauliflower.  Of course, I always love a great soup packed full of cheese.  This soup is simple, delicious, and elegant.  I made extra and froze it just so I could have it when the weather turns a little cooler.  (some may consider me crazy for eating soup when it is 100˚ outside!)

The recipe is straight from Heidi Swanson’s Super Natural Every Day on page 152 (if you happen to already own the book.)

    We grow kale in our garden all summer and it just makes me so happy to pick it in the morning for our green smoothies and/or green juices and in the afternoon for kale salad or to sauté and serve atop some quinoa. I just wish it was warm enough here for us to grow it year round! :-)

    I can’t wait to try this cauliflower soup recipe. The photos are making my mouth water at 8 a.m. :-)

    The book looks amazing. My favorite fruit during the summer is peaches. I just eat them hole. If they get too ripe I make jam. Yummy!

    As for the veggies, I like tomatoes on an open sandwich with mayo, salt and pepper and fresh picked corncobs steamed with butter and salt. So much memories related to summer eating!

    Ah, there’s so many fruits and vegetables to enjoy during the summer months so that’s a hard one. For fruits though, I’m going to have to go with peaches. It comes in close tie with cherries, but I think I use more peaches anyway. Definitely one of my staple baking fruits and my absolute favorite fruit to eat by itself.

    Vegetables? Eggplant. I just like how versitile eggplant is to cook with. It can be used in so many dishes and it’s so meaty (like mushrooms) that you can definitely replace meat with this vegetable to go all vegetarian.

    I would soooo love this cookbook!! I am starting (rather late in life) to try to eat healthier and more natural. I was eating my diet frozen lunch (wont give the name away) at work and started reading the ingrediants. It kinda scared me that I had to google almost every one of them. Now I work form 6 am to 7 pm Monday – Friday, so I didnt think I would have time to cook natural foods–I was wrong. When I get home at night, I play with the grand baby, help the daughter with homework, speak to the husban for a few, then fix my breakfast, lunch and snacks for the next day and put them in the fridge. I feel sooo much better doing this. I have just learned that my favorite veggie is now squash! Didnt know that before lol. I must thank all the blogers I read for giving me such wonderful quick and easy recipies!
