The first haul of summer (scroll down for the cucumber recipe):

I have recently found myself with an abundance of cucumbers and until I’m ready to make my family’s pickle recipe (I need a day specifically for this), I needed a quick way to start using more cucumbers.  My aunt made a similar salad to this for father’s day and it was delicious (and super simple.)

All you need to do is for every 1 cup of cucumbers you have sliced (about 1/4″ thick) add 1/4 cup of sliced onions, 1/4 cup of vinegar (I combined balsamic and apple cider), 1 Tablespoon of sugar (add more if you like extra sweetness), salt, pepper, and enough water to cover everything.  Let the mixture sit overnight and enjoy the next day.  These cucumbers are great by themselves or on top of a salad!

    Ah, that cucumber salad recipe is my absolute favorite. My father makes it every time there is a barbecue going on. Occassionally he’ll add some sliced green peppers to add more color + a bit more crunch.
