I had the strangest dream last night and I’m pretty sure it’s a good sign I should stop blogging before bed.

While there wasn’t really a story line all I can remember is that there was a food blogger party, with Joy (from Joy the Baker) hosting, kittens, wine, hula-hoops, and a whole bunch of people that I’m assuming I have never met.

I’m horrible at remembering dreams but this one seemed to be fun!

I have a feeling that most of it revolved around the fact that I have made these fries almost everyday.  I’m obsessed.

I LOVE sweet potatoes and when you turn them into fries, I’m drooling already.  I have to admit that I have failed miserably at sweet potato fries more times that I could count.  So many recipes left my fries soggy and more like roasted sweet potatoes.  Because of the sweet potatoes higher water content, the thing just doesn’t cook like a regular potato.

So really, I’m not sure what changed.  I adapted this recipe from Joy and while she uses the egg whites as a binding agent, I believe that the egg white actually helped crisp the outside of the sweet potato (because the egg white became a little crispy.)  I also think I’ve never been patient enough to let them bake long enough to become crispy.

Whatever change happened, I love these fries.  I’m obsessed with these fries.  I would eat these fries everyday if I could (and so far I’m about 3/5 days eating sweet potatoes.)

 

Baked Chipotle Sweet Potato Fries

Serves: 1

Ingredients
  • 1 medium sweet potato peeled
  • ½ tablespoon olive oil
  • 1 large egg white
  • ½ teaspoon chipotle powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • pinch salt and pepper

Instructions
  1. Pre-heat oven to 400˚F.
  2. Cut the ends off the sweet potato, stand on an end, and cut potato into ¼” slices . From there, cut each slice into ¼” strips (fry shape!) (if sizes are exact don’t worry as long as the fries are are similar in size, it may just change your baking time.)
  3. Place fries on a baking tray covered in parchment paper and toss with olive oil.
  4. In a small bowl whisk together egg whites and spices until the egg white becomes frothy. Pour over fries and toss one more time. Smooth fries out into a single layer.
  5. Bake for 20 minutes and then flip fries over, return to oven and continue to bake until fries have crisped (about 30-40 minutes). Remove from oven and serve with your favorite dipping sauce (I have a weakness for ranch…)

    Sweet potato fries are so awesome. I saw Joys recipe and I’m going to try it sometime soon. I do have a lonely sweet potato that’s been on the counter for quite a while :D

    I’ll have to try this, I bet sweet potatoes would taste great with chipotle! I’ve had them with some sort of adobo dipping sauce and it was great, I’ll have to look into how to make it…

    I too have failed in the past with homemade sweet potato fries, so consider these MADE! They look great, and I love the addition of chipotle powder. They’re going on the menu for next week!

    I love sweet potatoes and chipotle combo. I’ve made the mashed chipotle sweet potatoes but have never had them fried. I will have to try these..thanks!

      That is what Joy did with the original recipe and I think that is what I am going to go back and do next time (I love curry powder- I just don’t use it often!)

    I have the same issue with the soggy fries, so I’m excited to give these a try in hopes of something more crispy! And chipotle seasoning? Let’s be honest – even if they were soggy, I’d eat them all!!

    Mmm, I’m right there with you in your love of sweet potatoes. And so healthy, too! I’m a total heat wuss, so I’ll probably use sweet smoked paprika and reverse the proportions of paprika and chipotle, but otherwise these are genius. Plus, leftover egg yolks turn into good things like lemon curd and ice cream!
