I’ve been in a really bad Debbie Downer mood for the past few days and so today (with help from photos) I am going to tell you simple reasons why I am happy:

This was my day yesterday.  While the research was kind of blah other things that made me happy were: Opening the window/fresh air, homemade kettle corn, and things you can’t see: empty inbox and a new (comfy) office chair.

This guy.  We went for a five mile walk yesterday because of the awesome weather- it felt so good to get out and not have to bundle up!

Finally: Jazz/photography.  We have a big jazz festival this weekend and the event kicked off with the combos playing at the local coffee shop.  I of course took this opportunity to haul my camera along and take a some shots.

All of this makes me feel better.

Also, making meals that are healthier than you order makes me happy.  This one has cheese and buffalo chicken (one of my favorite combination) rolled up in a pizza crust-sort of like a calzone but rolled instead of folded.  If you didn’t know (and I’m not so sure many people do)- I love hot sauce.

This is one of those meals that I deem slightly healthier than eating out (depending on how much cheese you decide to shove in it and how much ranch you choose to dip it in.)  I am fairly certain that this is healthier than any buffalo chicken pizza you would get from delivery.

Buffalo Chicken Stromboli

Ingredients
  • Dough
  • ¾ cup warm water
  • 2 tablespoons sugar
  • 2 teaspoons yeast
  • 2 teaspoons salt
  • 1 tablespoon olive oil
  • 1 cup whole wheat flour
  • ½ cup unbleached all purpose flour as needed
  • Filling
  • 1 pound boneless turkey breast
  • ¼ cup Frank’s red hot
  • 2 tablespoons butter melted
  • 1 cup diced onions
  • ¾ cup bleu cheese
  • 1 cup shredded mozzarella
  • Oil, Parmesan, and Fresh Parsley for topping

Instructions
  1. In the bowl of a stand mixer, combine water, sugar, and yeast. Stir and let sit until yeast becomes active and mixture looks foamy. Add in remaining ingredients (except white flour) and begin to mix with dough hook. As dough comes together, add as much white flour as you need so that dough begins to pull away from the side of the bowl. Once dough has enough flour, let mixer run for 5-8 minutes longer in order to knead dough. Once done, spray with oil and set aside. Let rest for 45 minutes.
  2. While dough is rising, cook chicken (I have an indoor grilling pan I used for this but pan frying or grilling outside would work too.) Once chicken is cooked through, dice into 1-2″-1″ cubes and combine with Frank’s red hot and Butter (your Franks to Butter ratio will determine the heat: More Franks=hotter.)
  3. Pre-heat oven to 425˚ with a baking stone (if you have one)
  4. Once dough has risen, role out into a 16″x10″ rectangle with the 16″ edge parallel to your body. Leaving a 1″ border, spread chicken over dough (drizzle a little of the extra Frank’s over the chicken-about 2-3 T). Sprinkle Onions, Bleu cheese and mozzarella on top of that (the amount of cheese is really up to you- I give you suggestions.) Beginning with the side closest to you, begin to roll the stromboli away from you. When finished, seal each end edge and the long edge by pinching the dough. Cut three-four slits in the top and brush with olive oil and sprinkle with fresh parsley and parmesan. Slide onto baking stone (or sheet tray) and bake for 20-30 minutes or until the filling begins to bubble out and the crust is golden. Let cool slightly before cutting.

    I HAVE to make this! My husband is a huge buffalo chicken fanatic, and he has turned me into a fan as well. I’m all about “healthifying” traditionally heavy restaurant/take-out meals, and this one fits the bill perfectly.
