I really enjoy sweet potatoes.  In fact, I think I may love sweet potatoes more than I do regular potatoes (maybe, just maybe.)

So, when I saw this recipe for baked sweet potato falafels I seriously about feel head over heels in love when I saw this recipe. Not only does in include sweet potatoes, the sweet potatoes are in falafel form and they are baked.

This is another 101 Cookbooks recipe (I seriously can’t get enough of that site!) and Heidi writes:

“These aren’t your typical falafel, nor were they intended to be, just keep that in mind before you write in. These falafel are made with a mashed sweet potato and chickpea flour base, accented with a generous punch of spices, a nice amount of garlic and plenty of chopped cilantro. If you’re looking for that crunchy, fried, falafel experience, this isn’t it. But these are delicious in their own way.”

I love a good falafel as much as the next person but these are ahhhh-mazing even thought they aren’t like the traditional falafel.
