Lemon Meringue Pie

I am currently in a hotel, in a Chicago suburb, surrounded by 100 some members of the marching band.  Yup, we’re on a trip.  Luckily I get my own room so a little peace and quite is nice.

While I’m away, please enjoy pie.  I seem to be in a pie phase.

I love lemon meringue and I’ve recently gone on a Food and Wine kick.  So, the recipe is from there with a twist.  I added 1/2 cup of lemon curd to the filling.

This is some serious lemon pie….

    Ah, marching band trips. LOL My hubby is a h.s. band director, so I’ve been on many of those trips. Personally, I kinda would enjoy a big ole slice of your pie better. : )

      Ha! I think that is why I posted this at midnight as I was sewing up a pair of uniform pants that ripped… all I could think about was pie :)

    I’ve seen so many recipes lately for lemon desserts! So far, I think yours must be the best! The other one I really like is Ina Garten’s Lemon Yogurt Cake. What do you think? Thanks again for sharing this delicious lemon recipe!
