I think in one summer I could eat my weight in ice cream.  When the temperature hits 90˚ and all I want to do is be cool, ice cream is where I turn.

I hate to even admit this though- I get tired of eating ice cream.  I know, it sounds like blasphemy.  Who could actually get tired of ice cream?

I think it may because because I crave something lighter but still cool and delicious.  When I saw this lemon mousse, I knew I found what I was looking for.

I preface this by saying I have gotten in a bad habit of recording food network shows.  It’s not bad enough that I watch food network all the time, I have to record them so I can watch the shows I really want to watch at any time of the day.  My favorite show?  Ina.  I love her food and I just love all the tips you can collect in one show.

Needless to say when I watched the show with this lemon mousse, I was a possessed girl.  All I wanted to do was run into the kitchen and whip up a batch of this lemon mousse.  This mousse was every bit as good as it looked on t.v.  Light, lemony, delicious- I couldn’t have asked for more.

Find the recipe here on the Food Network Site. I have to say, this makes a lot.  I cut the recipe down by a third and still had plenty of mousse that could easily be dessert for four people (even though two of us managed to devour the entire batch…)
