Chocolate Sugar Cookies

I grew up in a cat family.

Don’t get me wrong, I love cats.  I love their different personalities and their willingness to curl up and cuddle with you.  However, I don’t love their inability to go on walks, greet you at the door, and be your friend.  Cats are more just there- rulers of the house (Trust me, one of my mom’s cats thinks he isn’t a cat but a king trapped in a cat’s body.)

I have always loved dogs.  I did have the chance to grow up with a dog named Pete- he was a golden lab that belonged to my uncle but spent a great deal of time with my grandparents (just liked I did.)  I loved running around the backyard with him and I think even as a five year old I was plotting of to steal him and take him home.

I gave up on trying to get a dog out of my parents because I eventually learned it just wasn’t going to happen.  I decided a dog just wasn’t the right thing- until now.

I’d like you to meet Brittany’s two lovable goofs, spanky and buckwheat, that have slobbered their way into my heart….

I mean, how can you not help but love them?

So today, I am driving to look for a dog of my very own and I seriously feel like an expecting mother (without all the food cravings and gas…)  What’s happens when I get excited?  I bake.  Seriously, I think it may be a bit of a problem.

I present to you the chocolate sugar cookie- for when a regular one isn’t enough and you are in need of a chocolate fix.  I took my favorite sugar cookie recipe and added cocoa powder- super easy and super delicious.


Chocolate Sugar Cookies

Servings: 1 dozen
Ingredients
  • 1/2 cup butter
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/8 teaspoon baking soda
  • 1 1/2 cups unbleached all purpose flour
  • 1/3 cup cocoa powder
Directions
  • Using the paddle attachment on your mixer, cream butter and sugar together.  Add one egg at a time, making sure to incorporate each egg well, mix in vanilla.   Add dry ingredients and continue to mix until dough comes together- let mixer continue for another two minutes.
  • At this point you can put the dough in the refrigerator for later use or roll out onto a floured surface and cut.
  • Bake on a parchment covered try for 8-10 minutes.  With the chocolate, it may be hard to tell when they are done.  The edges should be firm and the middle should still be slightly soft.
  • Top with your favorite icing or frosting.  I use the Wilton Royal icing with a little cocoa powder.

    I’d just like to share that my parents cats (and my cats when I lived at home) always greet us at the door and want to snuggle.

    Yum, YUM and Y-U-M. I love sugar cookies…but with cocoa powder?! Oh. My. Gosh. I cannot wait to try these! And good luck with the dog search! I hope the right one finds you soon! My two are truly one of the best things that have happened to this household!

    These are so cute!!

    Good luck finding a dog. I had a maltese shih-tzu and she was just gorgeous. The most beautiful dog ever. I’m hoping we will get another dog soon.

    Thanks everyone! I have a new addition to my family coming on Tuesday in the form of a 5 year old husky named Radar- I am so excited!
