I have to call it like I see it but fava beans (shelled) are some of the ugliest, unappetizing things I have ever seen.
But, once you get the shell off and are left with just the beans, they look absolutely gorgeous. You are left with this nice buttery bean that adds a great addition to any meal or could even stand on it’s own as a nice side dish.
I am always trying to make up new, inventive lunches that only take about 15 minutes to make. I use mascarpone cheese to pull off a slightly creamy texture to the rice (I know that mascarpone cheese is high in calories, but I only use 1 tablespoon per serving- that is all you really need!) Add in the buttery flavor of the beans, the light summery taste of the basil/lemon, and you have yourself a delicious lunch that is healthy and ready in until 15 minutes (If you only get an hour for lunch, instant rice is the way to go.)
- ½ cup fava beans
- ¼ cup green onions
- ⅓ cup white cucumber
- 1 teaspoon olive oil
- 1 tablespoon lemon zest
- 1 tablespoon fresh basil
- 1 tablespoon mascarpone cheese
- 3 tablespoon parmesan
- ½ cup brown rice
- Prepare rice according to box. I eat this as a quick lunch dish and sometimes will use left over rice.
- While rice is cooking, heat olive oil in a pan. Add onions, fava beans, and cucumber to pan. Saute over medium to medium-low heat until the beans are softened- about 8-10 minutes. Add lemon zest/basil and continue to cook for 1-2 minutes. Remove from heat.
- Once rice is done, stir in cheeses until cheese melts and rice becomes creamy. Finally, stir in bean mixture and enjoy while warm. Garnish with a little extra basil or Parmesan if desired.
