This is a father’s day dinner fit for a king.  If you missed it, check out my father’s day post.

My father loves this dish from a local restaurant and I thought that the best thing I could for him is make my version.  A creamy pesto Alfredo sauce, tossed with chicken and pasta.  Don’t let the leafy basil fool you- this dish is rich but soooo delicious.

So, if you need a meal that is sure to impress- this is great.  Serve with a salad and a slice of garlic bread, you’ve got it made!

Creamy Pesto Pasta

Ingredients
  • Pesto:
  • 2 cup basil leaves
  • 1 clove garlic
  • ¼ cup pine nuts
  • ⅓ cup parmesan cheese
  • 3 tablespoon Olive oil
  • Alfredo Sauce:
  • 4 tablespoon butter
  • 1 clove garlic
  • ½ cup milk
  • ½ cup heavy cream
  • 6 ounce cream cheese
  • ½ cup parmesan cheese
  • none salt and pepper
  • Extra:
  • 1 pound chicken
  • 1 tablespoon poultry seasoning
  • ½ tablespoon oregano
  • ½ tablespoon garlic powder
  • 2 tablespoon olive oil
  • 8 ounce whole wheat pasta
  • ¼ cup parmesan cheese
  • ¼ cup pine nuts, toasted

Instructions
  1. Rub chicken breast with olive oil, poultry seasoning, oregano, and garlic. Grill chicken for 12-15 minutes until chicken breast is cooked through. Once done, set aside and tent with tin foil to let chicken rest. Slice into pieces.
  2. To make pesto: Combine all of the ingredients for the pesto, minus the olive oil, into a food processor. Pulse to combine. Begin to pour in olive oil and continually pulse mixture- the goal is not to liquefy but have all the ingredients finely chopped. Set aside.
  3. In a large skillet, melt butter over medium-low heat. Add in garlic and cook until garlic becomes fragrant, about 2-3 minutes. Cut cream cheese into chunks and whisk into butter mixture. Continue to whisk until cream cheese is melted. Pour in milk and heavy cream, continue to whisk until sauce is hot and thickens slightly. Stir in cheese and salt/pepper. Once Alfredo is ready, stir in pesto. Stir sauce into chicken and pasta. Sprinkle with remaining cheese and toasted pine nuts. Serve immediately.

      I think it is darn close. I have no idea what the “real” recipe is but I combined my alfredo sauce and my pesto sauce, the result was pretty darn close!

    How much yogurt and sour cream do you use? I notice it in the instructions but I don’t see it in the ingredients. :)

      Turns out that when I revamped my website, that recipe got mixed up and the one you saw, wasn’t even a recipe on the site. So, the actual recipe is now up (and thanks for the catch that led to an even bigger thing!)
