During the summer, I love yogurt as a snack during the day.  It is kind of like ice cream, only better for you.

However, I can’t eat my yogurt plain- I always have to sprinkle a little granola on top.  Often I will look for what I have around the house and throw into granola.  This week happen to be dried cherries and pecans.  Add in a little agave nectar and orange juice, you’ve got yourself one delicious granola.  Why by boxed when you can make granola with ingredients you already have around the house?

Cherry Pecan Granola

Ingredients
  • 2 cup rolled oats
  • ¾ cup pecan pieces
  • ¼ cup flaxseeds
  • ¼ cup wheat germ
  • ¼ cup sucanat
  • 2 teaspoon cinnamon
  • ¼ cup agave
  • ⅓ cup canola oil
  • ⅓ cup orange juice
  • 1 teaspoon vanilla extract.
  • 1 cup dried cherries
Instructions
  1. Preheat oven to 300˚.
  2. In a large bowl combine the first six ingredients, through the cinnamon, and give a quick toss to combine. In a separate bowl, combine all the wet ingredients and whisk to combine. Pour wet mixture over oat mixture and stir so that every piece is coated.
  3. On a parchment covered tray, spread mixture so that it is a think layer. Bake for one hour, stirring every 15 minutes so that the edges do not burn. Once done, let cool for 15 minutes. Pour granola into a bowl and toss with dried cherries.
  4. *Works well with any combination of dried fruit and nuts
