I have turned into a space cadet (and yes, I just used the term space cadet…)

I am so off in my dates, I thought yesterday was cinco de mayo.  I looked at the calendar when planning the meals for the week and thought it would be fun to do something festive for that day.  So, I planned out my menu, went to the store (on Sunday mind you), and realized a day later when I was signing a check that I screwed up.  Turns out tomorrow is the 5th.

But you know what?  Who cares!  Turns out I won’t even be around tomorrow so my little mistake paid off- I still cooked something for cinco de mayo.  I actually made a couple of new things, so I wanted to share this one today- Avocado and chickpea salad with a lime dressing.

I’m actually kind of glad I didn’t realize cinco de mayo- this salad was that good!

Fantastic! I made this for a Mother’s Day BBQ. It is sitting in the refrigerator chilling now. I can’t wait to wow my hostess!

This would have made a great Mother’s day dish! I hope everyone love it!

Definitely making this. Seems like it has great texture especially over a fresh green salad. I was just introduced to Naturally Ella through Kel (2 comments up) and I will be back! Funny…my name is Erin too and my birthday was May 4th…sounds like me + this blog were meant to be. ;)

I was expecting a more citrus dressing but the balsamic vinegar overwhelmed with sweetness (in addition to the sugar). It’s still very good, but next time I’m going to figure out a more lime flavored dressing to pair with the avo & chickpeas.

I must admit that I am usually heavy handed on balsamic vinegar. Please let me know how the citrus turns out!

I have some avocados that I really wanted to use! Now I know what to do with them!

I tweaked the recipe by doubling it and using three avocados and three limes instead of two, as well as agave nectar instead of sugar and it wasn’t overpowered by the balsamic vinegar anymore. I can’t stop eating it :D

So simple and delicious, such a difference from a usual leafy salad. I put finely cubed cucumber in mine.
