I feel the need to be a Debbie downer for a bit.

With the recent turn of events, I have realized that I am going to be living alone again.  For the most part, I really don’t have a problem (I’m not scared of the dark and I am slightly excited that I will only have myself to pick up after) except for the fact that I will be cooking for one.

I swear there is nothing more depressing than having to try and figure out how to scale a recipe down for one.  Sure there are times I will make extras for leftovers or freezing, but there are some days I want to make just the right amount.  When I cook, I cook to at least feed four people (if not more.)  So unless I want to weigh 300 pounds, I need to figure out how to scale down my recipes (and fast!)

Enter in the person quiche.

Sure I could make mini quiche and have just the right amount but there is one thing I usually hate with quiche- making the crust.  It’s not like it is very labor intensive or hard, I just hate having that one extra step (wow, I really am a Debbie downer today….)

So, I cheer up and use a tortilla.  That’s right.  Tortillas make the perfect pre-made shell that I can just toss ingredients in, bake, and ta-da: person quiche under 500 calories (I just love the sound of that!)  I now have no reason to be a Debbie downer when I can make a quiche for one- how perfect!

Tortilla quiche

Ingredients
  • 1 10″ tortilla shell
  • 1 egg
  • ½ cup milk
  • 1 tablespoon cilantro
  • 1 tablespoon frank’s red hot
  • ¼ cup red onions
  • ¼ cup olive
  • ¼ cup black beans
  • 2 tablespoon sun dried tomatoes
  • 1 tablespoon jalepeno
  • ¼ cup cheese

Instructions
  1. Pre-heat oven to 350˚.
  2. (I used a 4 cup Pyrex bowl). Heat tortilla so that it is pliable enough to create a shell inside the bowl. In a separate small bowl whisk together milk, egg, frank’s, cilantro, and salt/pepper.
  3. Place vegetables, beans, and cheese in the bottom of the tortilla bowl. Pour egg mixture over ingredients. Bake for 45-50 minutes until egg mixture is set and doesn’t jiggle when you shake it.

    This is so clever! I love it. I currently live somewhere with no cooking facilities (yes, I know, it’s barbaric!), but I am bookmarking recipes like there’s no tomorrow for when I can cook again (end of May!!). I think this might be one of the first things I make. :)

    this is a really ingenious little meal, erin! i’m a sucker for tortilla bowls, and the less work required to achieve quiche creation, the better!

    Made this tonight for a college girl’s dinner and I was wondering if it could be microwaveable? I know the egg would bake fine but the effect on the tortilla? Thoughts?

      I have a feeling that the tortilla wouldn’t crisp up as well as it does in the oven but I think it may be worth a try!

    So I just used microwaved this for lunch and I would argue that it turns out BETTER than using the oven! Not only does it only take about 2.5 minutes to cook but the tortilla still crisps at the top and using Rubbermaid dishes makes everything a lot easier! Great substitute for those who are short on time or don’t have easy/quick access to an oven :)

    Hey Erin, I loved this recipe. Sorry, this is random, but I had JUST read this article that Debbie Downers don’t live as long as happy-types. Then I stumbled upon your blog for this recipe I was searching for, and the first line I read was about you being a Debbie Downer! ACK! Get happy! Hopefully, after two years, you ditched that Debbie Downer. She’s no good for anybody ;-)

    (BTW, I used to live in Iowa for many years, but like you, my heart was always somewhere else).
