Ingredients
  • 1 large Potato
  • 1 tablespoon olive oil
  • 1 tablespoon garlic
  • 1 teaspoon black pepper
  • 1 tablespoon oregano
  • 1 teaspoon mustard powder
  • 1 teaspoon parsley
  • salt to taste

Instructions
  1. Preheat oven to 425˚.
  2. Before cutting potato, rinse well under water. From there, cut the ends off the potato, stand up on end, and cut slices from the potato that are ¼” thick (depending on how thick you want your fries- cut accordingly) Take slices and cut fries out of the potato-using ¼ ” as the measurement.
  3. Once all fries are cut, place in medium bowl and add the remaining ingredients, tossing until every piece is covered. Spread out onto a baking sheet covered in parchment paper. Bake for 25 minutes, flip the fries, and bake for a remaining 10-15 until fries are crispy (35-45 minutes total.) Make sure to not over crowed the pan- this is result in uneven baking.

      Plain old Idaho- They have a higher starch content compared to other potatoes so they crisp up really nice!

    This is a pretty great recipe. Good call on the Idaho (higher starch)- didn’t know that, but they cooked up perfectly. I upped the olive oil (was probably closer to 1 1/2 tablespoons per potato), and made two batches. I hadn’t ever known/tried a method for oven-baked, homemade fries- yours is great! I opted for my own seasoning, mostly because I forgot everything but the chopping method and cooking temperature by the time I got downstairs, and my phone battery was too far gone to retrieve your page from the kitchen =). If interested, I ended up with:

    2 1/2 large Idaho potatoes (had to cut a rough patch out of one of them)

    3 to 3 1/2 tablespoons olive oil (eyeball it)

    2 tablespoons dried rosemary

    2 large garlic cloves, chopped finely

    3 generous pinches sea salt (2 tablespoons?)

    1/2 cup grated romano cheese (grated, not powdered)

    coarse ground pepper to taste

    (all measurements above are estimations)

    In a large bowl, thoroughly toss fries in olive oil. Add rosemary and garlic- toss again. Spread fries over TWO pans with parchment paper (or cook in two batches- Erin is correct about spreading them out and not crowding them. Sprinkle pepper as desired. Sprinkle half of the sea salt and half of the cheese over the batches (reserve half for when you flip the fries). Bake as instructed, and sprinkle remainder of sea salt and cheese over the batches. Finish baking.

    Cheese is more to add flavor than to be “cheesy fries”. It gets nicely crisp on the fries by the time they’re done.

    Thank you for this method- I’m going to go on a baked fries kick now. Also, not sure if its bad form to post alternate seasoning in a comment- if so, feel free to delete my comment. Either way, thanks for the awesome method!

    Try soaking the potatoes in salt water before baking. This removes some of the water in the potatoes and they are crisper.

    I added some crushed red pepper to the mix and the few fries I did try tasted great. I followed the oven temp and baking time and almost burned the house down…most fries were completely black (I know, I should have checked on them). Not sure why mine turned out this way. Next time I’ll take them out earlier and lower the temp to 400 degrees. Thanks for the recipe!

      The unfortunate part is that ovens can be finicky Have you check your oven temperature before? Sometimes they can be off. My suggestion would be to leave the temperature the same and just reduce the cooking time! Hope that helps!
