When you clicked on this post and realized there were no pictures, you may be confused. I mean, my blog heavily relies on photos. Well, they will be up later today, just not now. I had to get to school at a certain time to catch a professor because let me tell you, they may just be one of the hardest creatures to catch. So I baked my cookies, took photos, packed my bag, and off I went to school. Without my photo hard drive-DANG IT! So all that is left is a giant question mark as my photo (how perfect, right?) However, I wanted to go ahead and post anyway because, well, I really, really liked these cookies. All Fixed!
I’ve had cookies two weeks in a row for breakfast on Tuesdays! Well, cookie dough last week and actual cookies this week. I guess procrastination has it’s perks! I really didn’t mean to procrastinate this week- I was really excited about this recipe (seeing as I am obsessed with wheat products and I was excited that this weeks recipe was not chocolate!)
Twice I told myself to write down wheat germ on my grocery list and when I failed to do that, I told myself (while walking into the grocery store) to not forget wheat germ. And you know what? I went to make these cookies Monday and realized I had indeed forgotten wheat germ. So, I substituted:
Oat bran for wheat germ
Orange Zest for lemon zest ( I didn’t even bother to look at the amount in the recipe, I just zested my little heart out…)
Egg Whites for one egg (I had to halve the recipe because I only had 1/3 cup of oat bran)
Plus I added cinnamon to the coating of oat bran.
The result?
A freaking’ amazing cookie that has that perfect hint of citrus mixed with cinnamon that isn’t too sweet. Yeah, I love this cookie. I know I may be in the minority but oh well, I stick by my decision.

It’s good to know that they worked out just as well with the oat bran! I know some people didn’t like them but I thought they were great, wheat germ and all. And with all that bran, they’re DEFINITELY a healthy(ish…?) breakfast choice.
Love all the additions, add-ins, changes, etc. people share each week, I learn a lot! Your cookies look and sound great…your photos are amazing and creative. I loved these, so perfect with a cup of tea as the honey and lemon are already built right in. What a deal!
