We had a birthday party for Mike’s 93 year old grandfather, his sister and I got our nails done, we ate, ate, and ate junk food (so I retaliated with eating half and avocado for lunch), and we were able to spend time with Mike’s adorable niece (she can keep you running!)  All in all, the weekend was great.  Next weekend promises to be even better (I hope!)

So, as you can imagine, there was little time for cooking.  So, I baked before we left!  I had a craving to make cookies and I realized there was something missing from my life: White chocolate cranberry cookies.  When I worked at the bakery, I think I ate one of these cookies almost everyday.  The combination of cranberries and white chocolate in a cookie is delicious.  So, I used my favorite chocolate chip recipe and whipped up a batch of these.  No wonder I gained 10 pounds working at the bakery!

White Chocolate Cranberry Cookie

Ingredients
  • 12 tablespoon butter
  • 1¼ cup brown sugar
  • ¼ cup sugar
  • 1 teaspoon almond extract
  • ¾ teaspoon baking powder
  • ¾ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 egg
  • 2¼ cup flour
  • 2 cup white chocolate chips
  • 1 cup dried cranberries

Instructions
  1. Preheat oven to 375˚.
  2. Beat together room temperature butter with sugars until sugar is blended and mixture is fluffy. Add vanilla, baking powder, salt, baking soda, and egg-continue to beat until everything is well incorporated. Add flour and mix until dough comes together and everything is well incorporated. Stir in white chocolate chips and cranberries.
  3. Scoop cookies onto a cookie tray lined with parchment paper. I used an ice cream scoop so I would have large cookies. Flatten slightly and bake for about 12 minutes or until edges are lightly brown (centers will not be set but will continue to cook after pulled from oven. ) Any longer than this and the cookie will have tough edges. Let cool for about 5 minutes on tray and then move to cooling rack.

    A very pretty cookie that is, and what a good and easy idea for Valentines Day. I would much rather receive cookies than a box of chocolates, especially since one has to spend an arm and a leg to get a really good box!

    I found these on Tastespotting last night and immediately pulled out my standing mixer. Subbed half of the all-purpose flour with whole wheat and used vanilla extract (though almond would be divine). Made a huge batch and brought the bag into work. Needless to say it’s 5pm and the bag’s ben empty for a while now! These were great and a good reason for me to use up the white chocolate chips that have been sitting in my pantry.     Hi! I came across this recipe on tastespotting and I LOVE it, but my cookies came out all flat! Do you have any idea what could have gone wrong? The taste is terrific though!

      There are three possibly culprits that I could think of: too much baking soda, this will cause the cookie to spread more. 2. your butter was too soft/melted, that would cause for a flatten cookie, or finally 3. possibly a mis-measurement of the flour. Also, if you haven’t bought baking soda or baking powder recently- check your expiration date, they could be bad! I hope this helps!

    My dough came out very dry. Is this missing an ingredient by chance?

      I decided to add another 4 T butter and another egg. The dough was a little sticky, but the cookies came out great! I also added a 1/4 tsp vanilla extract

        This is a type of dough that needs to mix for a bit before it fully comes together.

      I use unsalted!

      always use unsalted butter in baking recipes and when recipe calls for salt, use kosher salt, it brings out the flavors in baked goods

    3/4 tsp of salt was way too much! And I added some almond milk to the recipe because the dough seemed too dry. They came out really terrific after I made those adjustments though. They were chewy and very soft.
