Saturday mornings are always my favorite time of the week. After the weekly rush of school and work, waking up on Saturday mornings is the most relaxed I am all week. I brew coffee, lounge around, and read the latest novel. So this Saturday I decided I wanted a small extra treat-a nice warm slice of coffee cake.
I mean, it is Saturday, why shouldn’t I have extra treats? What could be better than coffee, cinnamon coffee cake, a quite house, and a good book!

Cinnamon Swirl Coffee Cake

Ingredients
- 5 tablespoons butter
- 1/3 cup canola oil
- 1/2 cup cane sugar
- 1/2 cup sucanat
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- 1 cup flour
- 1 1/4 cups wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup plain yogurt
Filling- 1/2 cup walnuts
- 1/2 cup cane sugar
- 1/2 cup flour
- 1 teaspoon cinnamon
- 3 tablespoons butter melted
- pinch nutmeg
Icing- 1 cup powder sugar
- 1/8 cup milk (add more for thinner consistency)
- 1 teaspoon vanilla
- 1 cup powder sugar
- 1/8 cup milk (add more for thinner consistency)
- 1 teaspoon vanilla
Directions
- Preheat oven to 350˚
- In a mixing bowl, beat together butter, oil, and sugars until fluffy. Add eggs one at a time, making sure each egg is incorporated well. Add salt and vanilla, continue to beat until batter is mixed.
- In a separate bowl, combine dry ingredients . Add dry ingredients and sour cream into batter, alternating each. Mix just until blended (do not over mix!)
- Combine filling ingredients in a small bowl. Spoon half of the batter into a greased round tube pan (I used 10" but a bundt pan would also work.) Sprinkle half of the filling, followed by the remaining batter, and finished with the remaining filling.
- Bake the cake for 45 minutes or until a knife is inserted and comes out clean. Let cool slightly (for about 20 minutes) and carefully turn out onto a platter.
- Finish with icing.

my thought process works something like this–”hey, the name of this day ends in -y! i should have a treat to celebrate!”
great coffee cake. as someone who’s obsessed with cinnamon, i’d add quite a bit more to that awesome filling, but i suppose we must accommodate those who don’t share my infatuation.
I think that is my thought process most days (I just don’t tell myself that!)
I am also a cinnamon person but I ran out of cinnamon (not sure how that happened…) so I couldn’t figure out how much more to use!
