Cornmeal cheddar crackers

You may be wondering what anything I could have to write about would concern George of the Jungle.

Well, in  around about way I do.

Today is the first day of my month long break.  I woke up, went to the gym (yay!), and came home to clean the house.  Mind you, this was all before 10 am.  I got tired of cleaning and decided that since I could finally go get books from the public library (I owed another library money and the local library refused to give me a card until I payed down the 10 dollars I owed the previous library) I would head to library.  If you read the previous post about Christmas, pine trees, and snow being on the top of my favorite things list, you can add a box for libraries.  I absolutely love the ability to head to the library and pick up a few trashy romance novels (hey- they make for good light reading!), a couple actual books, and then some cookbooks.  How is that not amazing?

Anyway, back from the tangent, I was leaving the library on a glorious high from checking out books (yeah I’m a nerd, so what?) and began backing out of the parking spot and realizing a little too late that there was a telephone pole in my blind spot.  Luckily I have one tough little car and the pole only managed to crack the end of my bumper (stupid pole) and that is why I have George of the Jungle stuck in my head.  Well, primarily the part about “watch out for that tree.”  Sometimes I just get really random tidbits of song lyrics in my head, I guess that is just part of being a musician.

Once I was able to convince myself I was fine and the car was fine, the day really went without a hitch.  A lovely start to break if I do say so myself.  I started making my Christmas presents (will post later), cleaning, and baking.  Today’s menu?  Chili!  The weather is cold and snowy so I figured what better than a big bowl of chili?  Since I really don’t eat beef, I tried to find a good turkey chili recipe.  However, that is not what I want to have my show and tell with.

I made cornbread cheddar crackers for my chili.  I used my basic whole wheat cracker recipe, substituted a little cornmeal and threw in some cheddar.  I have to say, a pretty darn good addition to the chili.  However, I did find out that according Mike, everyone from our hometown (including him) eats a peanut butter sandwich with chili.  News to me!

Cornmeal Cheddar Crackers

  • 1 cup cornmeal
  • 1/2 cup whole wheat flour
  • 1/2 cup white flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon of salt
  • 2/3 cup water
  • 1/4 cup butter
  • 1 cup shredded cheddar cheese
Directions
  • Combined dry ingredients and cheese in a medium bowl, stir to blend
  • Add water and melted butter and mix. The dough will be very soft. Let sit while oven preheats to 400 degrees.
  • Roll dough out to 1/8’ thickness on a floured surface. Cut crackers into desired size- I find a pizza slicer works well.
  • Place on baking sheet, prick with fork, and bake for 12-14 minutes until edges begin to brown.
